Fresh Oysters With Blood Orange Vinaigrette

Ingredients

  • ½ cup of champagne or white wine vinegar 
  • 2 shallots (finely diced)
  • 1 blood orange (juice)
  • pinch of sugar 
  • pinch of salt
  • ground black pepper
  • chive or fennel fronds

    Method 

    1. Shuck oysters or ask your fishmonger to do it.
    2. Mix all ingredients together and whisk. Taste for seasoning.
    3. Arrange oysters on a plate over a layer of rock salt or crushed ice.
    4. To serve, spoon vinaigrette sauce over each oyster.
    5. Garnish with chive or fennel fronds and serve with a glass of bubbles.
